Preheat the oven to 250°F.
In a large bowl combine the oats, nuts, coconut, and brown sugar.
In a separate small bowl, combine the maple syrup, vegetable oil, and salt.
Pour the liquid mixture onto the oat mixture. Toss to combine.
Pour the mixture out onto a large rimmed baking sheet or two smaller rimmed baking sheets in one even layer.
Cook the mixture for 1 hour and 15 minutes, stirring every 15 minutes to ensure even browning. The granola is ready when it is evenly browned, fragrant, and the oats are crunchy.
Remove the granola from the oven and add to a large bowl. Toss with the raisins and dried cherries.
Let the granola cool and then store in an airtight container until you're ready to eat it.
