Preheat the oven to 200F.
Slice the sweet potatoes 1/3 inch thick, using a sharp knife or mandoline. If you are using a sharp knife, cut the ends off of the top and bottom of the sweet potato to make it easier to slice.
If you want to add some seasoning, go right ahead! I leave them plain, because I use them as a treat for Presley, but you could add cinnamon, barbecue seasoning, anything you like best for you to enjoy as a healthy snack!
Place the sliced sweet potatoes on a parchment lined baking sheet and bake in oven for 3 hours.
Flip the sweet potatoes over and bake 3 more hours.
Remove from the oven and let them cool completely. Store in an air tight container at room temperature for up to 2 weeks.
