Instant Pot Pulled Chicken Breast

This is a great to make on a Sunday to help you meal prep for the week. You can give some to your dog (which the pupper will love!) and you can (and should!!) keep some for yourself to add to salads, soups, sandwiches, pastas, and more throughout the week.

Equipment

  • Instant Pot (or other pressure cooker)

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup chicken broth approximately
  • Seasoning of choice

Instructions

  • Place the chicken breasts in your instant pot and season with your choice of seasoning. Since I use this chicken for our puppy, Presley, as well as for us, I just use salt and pepper since it’s puppy friendly!
  • Pour the chicken broth so it covers half way up the chicken breasts.
  • Close the instant pot and set the top so pressure is not releasing.
  • Cook for 10 minutes on high pressure.
  • After the timer is done, let the chicken sit in the instant pot for another 10 minutes, then release the remaining pressure and remove the lid.
  • Using 2 forks, shred the chicken breasts in the cooking liquid.
  • Store in an air tight container and ladle the cooking liquid over the pulled chicken breast. This will keep the chicken very moist.
  • Remove the chicken from the container as you want to use it and season to taste.
  • Add to soups, pastas, salads and more!
