Healthy Morning Glory Muffins

These morning glory muffins are packed with coconut, carrots, and apple and have no sugar added!
Servings: 18 muffins

Ingredients

  • 2 cups whole wheat pastry flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 3 eggs
  • 1 5.8- oz container of plain Greek yogurt I used Siggy's
  • 1 1/4 cup unsweetened applesauce
  • 10 medjool dates pitted
  • 2 tsp vanilla extract
  • 2 cups grated carrots
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/3 cup unsweetened flaked coconut
  • 1 medium apple peeled and grated

Instructions

  • In a small bowl, place your pitted dates and cover them with hot water. Set aside. You want them to soak for awhile so they can soften. So do this first and then prepare your ingredients and baking tins.
  • Preheat the oven to 350°F and prepare a muffin tin by coating with cooking spray and then lining with paper muffin liners.
  • In a medium bowl, combine the flour, baking soda, salt and cinnamon. 
  • Transfer the soaked dates and the water to a food processor. Combine until it forms a puree. It is fine if it is not totally smooth. 
  • Transfer the date puree to a large bowl and add the eggs. Whisk to combine. 
  • Add the remaining wet ingredients (greek yogurt, applesauce, vanilla) to the dates and eggs. Mix well.
  • Slowly add the dry ingredients to the wet ingredients and mix until just combined. 
  • With a wooden spoon, stir in the carrots, raisins, walnuts, coconut, and apple. 
  • Separate the batter into the muffin tins.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
