Greek Horiatiki Salad

This is a crunchy, fresh salad that is great as a main or a side!

Ingredients

  • 1 green bell pepper thinly sliced
  • 3 miniature cucumbers thinly sliced
  • 3 medium tomatoes
  • 1/2 medium red onion chopped
  • 1/4 crumbled French feta (like Valbreso)
  • 1/4 tsp salt
  • 1/2 tsp dried oregano
  • 3 tbsp olive oil
  • 1 tsp red wine vinegar
  • Pitted kalamata olives or capers (optional)

Instructions

  • Combine the green bell pepper and miniature cucumbers in a large bowl. I usually omit the onion, but add that here if you prefer it.
  • Slice your tomatoes in half and gently squeeze the juice out over the cucumbers and peppers. The acid from the tomato will serve as part of the dressing.
  • Roughly chop the tomatoes and add them to the bowl.
  • Add the feta, salt, oregano, olive oil, and vinegar. Toss to combine.
  • Top with more feta and olives/capers, if desired.
