Greek Horiatiki Salad
This is a crunchy, fresh salad that is great as a main or a side!
- 1 green bell pepper thinly sliced
- 3 miniature cucumbers thinly sliced
- 3 medium tomatoes
- 1/2 medium red onion chopped
- 1/4 crumbled French feta (like Valbreso)
- 1/4 tsp salt
- 1/2 tsp dried oregano
- 3 tbsp olive oil
- 1 tsp red wine vinegar
- Pitted kalamata olives or capers (optional)
Combine the green bell pepper and miniature cucumbers in a large bowl. I usually omit the onion, but add that here if you prefer it.
Slice your tomatoes in half and gently squeeze the juice out over the cucumbers and peppers. The acid from the tomato will serve as part of the dressing.
Roughly chop the tomatoes and add them to the bowl.
Add the feta, salt, oregano, olive oil, and vinegar. Toss to combine.
Top with more feta and olives/capers, if desired.
