Cilantro Lime Garlic Shrimp

This recipe is foolproof - it uses minimal ingredients and is perfect for a night when you want to eat something healthy and delicious but also want to spend no more than 20 minutes in your kitchen!

Ingredients

  • 1 lb medium shrimp peeled and deveined, tails removed
  • 2 tbsp olive oil divided
  • 4 cloves garlic minced
  • 4 tbsp chopped cilantro
  • Juice of half of a medium lime about 2 1/2 tbsp
  • Salt and pepper to taste

Instructions

  • Assemble the marinade by combining 1 tbsp of olive oil, the garlic, cilantro, lime juice, and salt and pepper. Start with 1/4 tsp of salt and a pinch of pepper. Then adjust to your taste. 
  • In a medium bowl, coat the shrimp in the marinade and set aside in the refrigerator for 10 minutes. 
  • While you wait 10 minutes to cook your shrimp, put on your pajamas and pour yourself and glass of wine. (It is a part of the recipe, so you should really do it!)
  • In a skillet over medium-high heat, add the remaining 1 tbsp olive oil. 
  • Once the oil is shimmering, add the bowl of marinated shrimp to the skillet. Try to get the shrimp in one layer in the pan. 
  • Cook the shrimp on one side for one minute, the shrimp should be starting to look pink. Flip the shrimp and cook one minute more. 
  • Serve with a squeeze of lime and top with some extra cilantro. Enjoy!!
