Preheat the oven to 350F.
In a small bowl, combine the melted butter, egg, and hot sauce.
In a large bowl, combine the ground chicken, breadcrumbs, salt, celery salt, paprika, garlic powder, cayenne, scallions, and hot sauce mixture.
Use your hands to mix it all together and evenly combine. Do not overwork.
Split the mix into 4 equal parts and loosely pack 4 patties.
Bake on a parchment paper covered baking sheet for 15-20 minutes, or until the internal temperature reads 165F.
Cooked this way, the patties will be extremely tender, almost like a meatball. If you want to add some additional texture, you can sear them for a minute or two on each side after you take them out of the oven. Alternatively, you can grill these or cook them in a pan, but I really like the tenderness you get from baking in the oven.
