This pulled chicken breast is easy to make and is a healthy addition to so many meals. It’s a great thing to make on a Sunday night to prepare for the week ahead and then you can add it to lunches throughout the week. I make this chicken super simply, because the other thing you can do is feed it to your dog! Our little puppy, Presley, loves this chicken and is so happy when he gets some as a treat. In order to make it safe for puppies too, you have to use minimal seasoning when you first cook it. Once it is cooked, you can season the meat as you use it. I’ve thrown together a quick sauce and used this in chicken tacos and I’ve added it to countless salads and soups. It’s a great base to have on hand so you can quickly add some healthy protein to any meal.
In your instant pot, you will add the chicken breasts and enough chicken broth (or water!) to cover halfway up the breasts. You can add whatever you seasoning you want at this step, if you plan to feed it just to humans, I would recommend lots of salt, lemon pepper and garlic powder. For those who plan to also feed to our furry family members, just add a little salt and lemon pepper. Then just close your instant pot, make sure its not releasing, and cook on high pressure for 10 minutes. When the timer ends, wait 10 minutes before releasing the pressure and then you can open up your Instant Pot to cooked chicken!
Once the chicken is cooked, you can begin shredding it. I like to use two forks to do this, but if you are fancy and have those bear claws, go right ahead and use that! I like to add the cooking liquid to the chicken as I am shredding it and preparing it for storage. That way, the chicken stays moist. Then when you are ready to use it, take out what you need, season accordingly and enjoy!

Try browning it with some garlic, lemon, salt and pepper and adding it to pasta! Or you can throw it into soups like chicken noodle or tortilla soup! You can even spice it up with some salsa, cumin, salt and pepper and throw it in tacos! The world is your oyster!
Instant Pot Pulled Chicken Breast
Equipment
- Instant Pot (or other pressure cooker)
Ingredients
- 1 lb boneless, skinless chicken breast
- 1 cup chicken broth approximately
- Seasoning of choice
Instructions
- Place the chicken breasts in your instant pot and season with your choice of seasoning. Since I use this chicken for our puppy, Presley, as well as for us, I just use salt and pepper since it’s puppy friendly!
- Pour the chicken broth so it covers half way up the chicken breasts.
- Close the instant pot and set the top so pressure is not releasing.
- Cook for 10 minutes on high pressure.
- After the timer is done, let the chicken sit in the instant pot for another 10 minutes, then release the remaining pressure and remove the lid.
- Using 2 forks, shred the chicken breasts in the cooking liquid.
- Store in an air tight container and ladle the cooking liquid over the pulled chicken breast. This will keep the chicken very moist.
- Remove the chicken from the container as you want to use it and season to taste.
- Add to soups, pastas, salads and more!
