Being a consultant means I’m constantly on the road. So that usually means lots of take out during the week, which can be really unhealthy. So when a new Residence Inn opened up near my current project, I was really excited to try it out. The idea of being able to cook my own meals during the week was so enticing! But there was a challenge too – what was I going to cook without all of my fancy chef’s tools? With only two little burners on an electric cook top? Without a real chef’s knife!? I knew if I was dealing with all of these challenges, other people must be struggling too! So I have started a new feature here on the blog called “Food on the Run”. All of the recipes in this category can be (and were!) made in a hotel room kitchen, like those in the Residence Inn. That means they have minimal ingredients, can be made on the stove, with just a pot or pan and absolutely no special equipment. They are great for other consultants and road warriors like myself, or for any beginning cook!
For the first feature, we are starting with something super simple, delicious, and healthy. This lemon dill salmon so few ingredients, can be made in 15 minutes, and the only tools you need are a butter knife, a spatula, and a pan. Can’t get any easier than that!
Easy Lemon Dill Salmon
Ingredients
- 2 6- oz salmon fillets skin removed (it won't get crispy, so don't leave it on!)
- Salt and pepper to taste
- 2 tbsp butter
- 1 clove garlic
- Juice of one medium lemon
- 2 tbsp fresh dill chopped
Instructions
- Remove the salmon from it's packaging and dry it off (carefully!) with a paper towel. Don't forget to remove the skin.
- Sprinkle on all sides with salt and pepper. Set aside.
- In a pan over medium heat, melt the butter with the garlic until fragrant.
- Add the lemon juice and dill, and stir until combined. Let cook for 1 minute.
- Add the salmon to the pan. Let it cook on one side for 5 minutes, but baste the salmon while it cooks. (To baste the salmon, use a spoon to scoop up the liquid from the pan and place it over the salmon while it cooks. This will infuse some great flavor into the salmon.)
- Using a spatula, flip the salmon and cook until it is cooked through, about 5 minutes. Baste the salmon again while it cooks.
- Plate with some of the sauce, garnish with fresh dill, and enjoy!

How do you remove the salmon skin with only a butter knife?

You don’t even need a butter knife at all to do that! When salmon is raw, you can peel the skin right off using your fingers.
