Sometimes work can get really busy – and these last two weeks have definitely been that way. When you are traveling and working up a storm, it can be difficult to whip up a delicious and healthy meal. Either you don’t have the time, or you don’t have the energy! But this cilantro, lime, garlic shrimp comes together in no time, requires under 5 ingredients, uses only a pan and a bowl, and is basically foolproof! You can eat the shrimp alone with a squeeze of lime, or top with guacamole, use as a taco filler, or serve it with some rice. The combinations are endless! When I am in a rush, I opt to eat these on their own, but they also are a delicious filling for a shrimp taco if you have some more time!
Cilantro Lime Garlic Shrimp
Ingredients
- 1 lb medium shrimp peeled and deveined, tails removed
- 2 tbsp olive oil divided
- 4 cloves garlic minced
- 4 tbsp chopped cilantro
- Juice of half of a medium lime about 2 1/2 tbsp
- Salt and pepper to taste
Instructions
- Assemble the marinade by combining 1 tbsp of olive oil, the garlic, cilantro, lime juice, and salt and pepper. Start with 1/4 tsp of salt and a pinch of pepper. Then adjust to your taste.
- In a medium bowl, coat the shrimp in the marinade and set aside in the refrigerator for 10 minutes.
- While you wait 10 minutes to cook your shrimp, put on your pajamas and pour yourself and glass of wine. (It is a part of the recipe, so you should really do it!)
- In a skillet over medium-high heat, add the remaining 1 tbsp olive oil.
- Once the oil is shimmering, add the bowl of marinated shrimp to the skillet. Try to get the shrimp in one layer in the pan.
- Cook the shrimp on one side for one minute, the shrimp should be starting to look pink. Flip the shrimp and cook one minute more.
- Serve with a squeeze of lime and top with some extra cilantro. Enjoy!!
