When I was traveling every week for work, it was really important to me that I was able to make fun and healthy meals to have during the week. So when I was working on a project that was about 25 minutes from a Wegmans, I made the effort to get myself there every week so I could cook meals for myself in my hotel room. Thanks, Residence Inn! I didn’t have a lot of ingredients to work with or a lot of tools, but I had a stove top and Wegmans has some delicious prepped buffalo chicken burgers that I could cook in a pan and eat with some greek salad. It was a really delicious combination that I could make at night and then package up to eat for lunch the next day. Such an easy and healthy lunch! Now being at home full time, I decided to make my own buffalo chicken burgers and they do not disappoint.
First you will mix together your buffalo sauce with an egg and some melted butter. Then you will add this to your ground chicken mix which also has breadcrumbs, scallions, salt, celery salt, paprika, garlic powder, and cayenne.
Mix all of this together with your hands until just incorporated and then lightly form into patties. You don’t want to pack too tightly or your burgers will be dense. Then you will bake in the oven for 15-20 minutes at 350F, or until the internal temperature is 165F. The chicken burgers will come out super moist and tender. If you want to add some crisp to the outside, you can sear in a hot pan for a minute or two on each side, but this isn’t necessary. I like to eat it with my Greek Horiatiki salad, but you can also eat it on a bun with some crunchy veggies, feta, or some ranch or blue cheese dressing! I think the pairing of the creamy French feta in my Greek Horiatiki salad with the buffalo chicken burgers is perfect to cut through the heat and the tender burgers pair so well with the crunchy veg.

Buffalo Chicken Burgers
Ingredients
- 1 large egg
- 3.5 tbsp hot sauce
- 2 tbsp unsalted butter melted
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/2 tsp salt
- 1/2 tsp celery salt
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Pinch cayenne
- 1 tbsp minced scallions
Instructions
- Preheat the oven to 350F.
- In a small bowl, combine the melted butter, egg, and hot sauce.
- In a large bowl, combine the ground chicken, breadcrumbs, salt, celery salt, paprika, garlic powder, cayenne, scallions, and hot sauce mixture.
- Use your hands to mix it all together and evenly combine. Do not overwork.
- Split the mix into 4 equal parts and loosely pack 4 patties.
- Bake on a parchment paper covered baking sheet for 15-20 minutes, or until the internal temperature reads 165F.
- Cooked this way, the patties will be extremely tender, almost like a meatball. If you want to add some additional texture, you can sear them for a minute or two on each side after you take them out of the oven. Alternatively, you can grill these or cook them in a pan, but I really like the tenderness you get from baking in the oven.
